The fermentation is done in stainless steel and big oak barrels, at controlled temperature, pumping must over and making delestage following the characteristic of the vintage. All products are organic, controlled and certified by CCPB (Consortium for the Control of Biological Products ).
Aging The aging period is done in French oak tonneau and barriques during 12-24 months.
Description
Made from organically grown grapes. Nuances of cherries and violets. As you spin the glass, it first turns into a tobacco scent, then licorice, tanned skin, and finally musk. On the palate, sweet and lively tannins give it strength, it's very long-lasting, and the gentle aroma of amaretto and marzipan lingers. "Ad Agio" is an Italian word that means "easily" or "relaxing".
